Sweet Potato Pudding

With no more of my Mom’s good cooking

And the ever increasing number of mouths to feed around here

I’m preparing more of my own meals than ever before (although many would consider them snacks ~grin~)

One of my favorite quickies is Sweet Potato "Pudding"

Half cantaloupe
2 tiny Bolivian sweet potatoes (peeled)
2 ½ tablespoons Sucanat (natural sweetener)
dash of cinnamon
5 ice cubes

Blend all in blender




Sooo yummy and good for you, too!

Hmmm cantelope and sweet potatoes together? I'll have to try this because I'm not sure what to think of that combination!

I hadnt thought of eating raw kumara (or sweet potato if you like ;)) like this! Great idea :)

Raw sweet potato?!! hmm... maybe I'll stick with Emma's diet: Chick-fil-a! ;-)

My memory of those cups is using them to hold clean water to brush my teeth at night!

Haha Heather I agree - Emma's diet is pretty tasty...

And Katrina I can totally hear the tias telling Jen not to "resfriar" because she's drinking something cold in the winter...ahhhhh! drives me insane!
